Wholewheat Galette With Savory Filling

Ovenderful Mom Bakers Community (OMBC) is an FB group comprised of a bunch of moms pledged to bake healthy foods for their families. It is actually not a small bunch now, but rather a set close to around 7500 members, headed by Simran, a true idol for many of us there. So this OMBC is celebrating their 2nd anniversary this November, and hence hosting a month long healthy baking contest. So as a part of it, I have decided to bake this part wholewheat galette with savory filling. This has been in my to-bake list for quite sometime. So thought why not try for this contest.

So this wholewheat galette with savory filling has a pizza-like taste and texture. It is a truly delicious and nutritive bake. This galette has the goodness of vegetables like broccoli, mushrooms and capsicum. I have included butter and cheese too, to get that soft and gooey texture. This makes it interesting for kids too.

This post also has another interesting fact, that it is my first recipe post with step-by-step pictorial instructions. Yes, I have made an effort to put in images of every important step, so as to make everything clear to you readers. My friend, Sreelakshmi, has put forward this suggestion. Many thanks to her. This is my first try, and hence not sure how good it has come out. Please feel free to let me know your feedback. I will always strive for bettering at it.

  2. To this add cold butter cubes and mozarella cheese.
    Wholewheat Galette - Step 2
  3. Using clean fingers, rub thoroughly until all the butter and cheese combines with the flours and form small crumbs.
    Wholewheat Galette - Step 3
  4. Now add cold water little by little until it forms a soft dough.
  5. Add in the vinegar too, and mix.
    Wholewheat Galette - Step 4
  6. Cling wrap the dough and regrigerate overnight. (Make sure to take the dough out atleast an hour ahead of baking).
  7. For preparing the filling, blanch the broccoli in salt water for 2-3 minutes. Once drained, slice them.
  8. Heat oil in a pan and saute, the garlic, onion, and mushrooms with little salt, until mushrooms turn to a light brown color.
  9. Next add in the broccoli slices and saute for 2 minutes, and turn the flame off.
    Step 7

  11. Place the dough and flatten with your clean palms. Using fingers, press and spread the dough to form a flat disk. (The dough would be easily spreadable with hands).
  12. Now transfer the rolled out dough carefully on to a greased and lined baking tray/tin.
  13. Now add half of the grated mozarella cheese to this dough, leaving space of around 1 inch along the border.
    Step 9
  14. Place the sauted mushrooms, broccoli, onions and garlic on top of it.
    Step 10
  15. Next add in the tomatoes, capsicum, and red chilli.
  16. Top it with the remaining mozarella cheese.
    Step 11
  17. Now fold the edges carefully towards inside.
  18. Give a coating of egg wash and sprinkle with sesame seeds.
  19. Preheat the oven to 180 degree centigrade.
  20. Bake for 50 minutes.
  21. Allow to cool a bit.
  22. Drizzle the lemon juice, oregano and corriander leaves on top.
