Vanilla Panna Cotta with Cherry Compote is a very easy dessert to make, that doesn’t need much cooking and preparations. It is egg-less too. If you wish to finish your feast on a sweet and soothing note, then this vanilla panna cotta is your perfect choice. Panna cotta is a traditional Italian dessert. It has milk, cream, sugar and flavorings as the main ingredient. Gelatin is usually used for setting.
Vanilla panna cotta is creamy and luscious. For all those who are not a big fan of chocolate puddings, like my dear husband, vanilla panna cotta is for you!! It is a melt in the mouth dessert. Sweet and simple. You may add any flavourings like vanilla, coffee or any fruit essence. If you are preparing vanilla panna cotta, you may serve it with a drizzle of cherry compote. So what I usually do is boil the milk beforehand and allow it to cool down to room temperature. Once the milk is ready, sprinkle gelatin evenly over the surface and allow to rest for about five minutes. Next dissolve gelatin in milk. Add sugar too at this point, and mix well so that both gelatin and sugar dissolves completely. You may use powdered sugar as well, which will make things faster. If your gelatin does not dissolve completely, don’t worry, when you warm it slightly, in the next step, it gets dissolved.
Once the milk mixture is ready, warm it slightly for about a minute. But do not boil it. Then switch the flame off, and allow to cool down to room temperature. When it cools down, add in the fresh cream and vanilla essence. If you are using any other flavorings like coffee or fruit essence, add it now. Then blend everything together in a blender (or mixer jar), and blend well. Keep the moulds ready. Or you may even use a big pudding tray. Pour the mixture to the moulds (or tray) and refrigerate for 4-5 hours. I usually keep it overnight.
Now let’s see how to prepare the cherry compote. First wash and rinse the cherries and deseed them. Then boil 1 cup water. Add this boiled water over the pitted cherries. Allow to soak this overnight. Then transfer the soaked cherries with water to a saucepan. Add sugar, lemon juice and lemon zest and mix well. Then boil on high flame for about 5-8 minutes. Then simmer and allow to cook for about 20-25 minutes or until it turns soft and syrupy. Switch the flame off and allow to cool down completely. I would suggest you to prepare the compote first, may be, a day in advance. Refrigerate until your panna cotta is made and sets.
While serving, demould the panna cotta from the moulds and drizzle the cherry compote on top. Garnish with fresh cherries and mint leaves.
