Here is an easy and tasty coconut chutney recipe. I learnt this delicious chutney recipe from my Ummachi (mother-in-law). There are N number of ways that you can prepare coconut chutney, coconut being the main ingredient. While some add green chili, some add red chili powder. Some add garlic, while other..ginger. A few may add both. So, there is actually a lot of ways you can try the combination, until you get the perfect balance of flavors. You may or may not add tamarind, roasted (Bengal) gram and so on.
So for this recipe I have used fresh grated coconut. It is quite a simple and quick recipe. Perfect to be had with dosa or idli. All you need is coconut, ginger, shallots and green chilis, with some seasoning too. If you are really in a hurry, you may even skip the final oil seasoning, and add in the curry leaves together with the other ingredients while grinding the coconut mixture.
