Palak Paneer – Learn How to Make Palak Paneer
Small, finely chopped
Wash and clean the spinach.
Boil about 3-4 cups of water.
Add about 1 tsp salt to it.
When the water boils, add the cleaned spinach to the water and allow to boil for about 1 minute.
Meanwhile prepare a water bath of ice cold water.
First remove the spinach from hot water and drain it in a sieve.
Then immediately transfer it to the ice cold water. This helps spinach to retain most of its bright green lovely color.
After about 30 seconds, again drain the excess water.
Next grind spinach and green chilies well to form a smooth puree.
Keep it aside.
Then heat oil in a pan.
Splutter cumin seeds.
Next add the chopped onions and saute until it turns soft and pink.
Next add the crushed garlic and ginger and saute until the raw smell goes off.
Then add the prepared spinach puree and allow to boil.
Once it boils, add the paneer cubes and salt. Mix gently, without breaking the paneer cubes.
Add 2 tbsp water if the gravy looks too thick.
Cook uncovered for 2-3 minutes. Covering the pan might change the color of spinach.
Next add lemon juice and mix.
Switch the flame off.
Garnish with fresh cream.
Serve hot with roti or naan.
