This healthy nutty chocolate marble loaf cake is actually the result of an experiment. But actually the expected result was something else.. 🙂 Yes…it happens in baking, especially. But whatsoever the cake turned out to be super yummmm and irresistible. After all it is a chocolate cake 🙂
So actually I had attempted to bake a cashew upside down cake. The preparations were also done. But somehow while layering the batter, it got mixed up and the jaggery powder that was intended to caramelize the cashew spread across the base and became dominant 🙂 So the result was that once the cake was upside down, cashews were not visible properly.
The combination of chocolate and cashews works very well. This nut cake is so soft,moist and chocolatey. It has a crunchy top because of the caramelized jaggery and the nuts. You cannot make out that it is made of wholewheat flour. The texture too was awesome. Sieving the flour multiple times definitely works wonders. It makes the cake less dense and airy. This is one of the most helpful tips that I learnt from my friend Akila of Morphy and Me. She’s a treasure house of knowledge.. 🙂 Usually wholewheat cakes tend to be little denser. But sifting it 5-6 or more times makes it lighter in texture.
So this nutty chocolate marble loaf cake is my first healthy bake this new year, baked on the first day of the year. And I have made this especially for Tanu as her school reopened today. And I wanted to surprise her by keeping this treat in her snack box. But the surprise part didn’t work out, as the house was filled with the beautiful freshly baked cake aroma. And we had 5-6 pieces of the cake yesterday itself. But she loved it sooooo much that made me soooo happy!! Happy and content Tanu, happy me!! 🙂
Do check this easy and quick recipe and you can make it too. No special ingredients required. If you want, you may even omit the jaggery part. Just sprinkle some cashew nuts on the greased cake tin, before pouring in the batter.
