Easy Vegetable Curry in less than 30 minutes

 

Here is a very quick and easy vegetable curry that you can serve along with roti or phulkas for dinner. This is a very simple and basic recipe. But tastes too good. Any beginner in cooking can try this recipe like a pro. It is very easy and doesn’t consume much time.

Once you have all the veggies chopped and ready, you could just mix everything up and serve this masaledar gravy. I have used carrots, beans, potatoes and peas to make this curry. However you may omit or add anything as per your taste and availability.

Try making this gravy more thick and richer by adding a little, may be a quarter cup of cashew nut paste or fresh cream. This makes it more appetizing and tastier. Otherwise too, with the everyday ingredients available in the pantry, this dish tastes awesome.

  1. Heat oil in a pan.
  2. Add cumin seeds, cloves, cinnamon, cardamom, pepper balls, whole red chilis and bay leaf.
  3. Saute for a minute, until they begin to splutter.
  4. Once you get the beautiful aroma of the spices, add in the chopped onions and saute until they turn light pink.
  5. Next add the ginger garlic paste and saute until the raw smell goes off.
  6. Simmer the flame, and add turmeric powder, red chili powder and coriander powder.
  7. Saute well until the raw smell goes off.
  8. Add in the chopped tomatoes and mix well.
  9. Once the tomatoes soften and the oil starts appearing at the top, add the diced vegetables.
  10. Saute them well for about 3-4 minutes.
  11. Next add water and cook closed for about 15-20 minutes, until done.
  12. Once the veggies are cooked, add the garam masala powder, corriander leaves and lemon juice.
  13. Mix well and cook covered for 2-3 minutes.
  14. Switch the flame off.
  15. Serve hot with roti or phulkas.
