Easy Chocolate Nut Cake – A Healthy Bake

Here is another tasty and healthy chocolate cake recipe that you can try easily at home. This cake is made with a blend of healthier flours, sweeteners and fats. And hence it is a good option to be given to kids as snack. You can also have it totally guilt free 🙂

So I keep experimenting with new combination of flours and sweeteners. So this time I have tried this bake with powdered jaggery. You get it in the market as powdered jaggery. I got mine from Conscious Foods. Jaggery is way better than the refined sugar that we normally use. The health benefits of jaggery are many.

So this cake has a slight earthy flavor of the new sweetener used, and hence it is different, but in a good way. I have used equal parts of wholewheat flour and barley flour in this bake. And the cocoa makes it interesting for the little ones. And all the healthy things are masked behind this one ingredient 🙂

So first sieve the dry ingredients together as many times as possible. May be , 6-7 times. Wholewheat cakes tend to be a little denser, so sieving it multiple times help it make light and less dense. Do try it, it works. Then whisk together the wet ingredients, that is, eggs, oil and vanilla essence. Add in the powdered jaggery too. Blend well. Keep the milk at room temperature ready. Now add the dry mixture to the wet mixture, little by little, adding milk in between. Whisk well after each add. Ensure that you don’t over beat either.  So our batter is ready. Preheat the oven to 180 degree centigrade. Pour the batter into a greased baking tin.

Now for the topping of nuts, in order to prevent the nuts from sinking into the cake batter, there is a small trick. Just take a little, may be 1-2 tbsp, of the flour in a bowl. Add in the split nuts, give a mix and let the flour coat them as much as possible. Now remove the nuts from the flour and arrange them carefully on top of the batter.

Bake for 35-40 minutes, until a toothpick inserted comes out clean. Allow to cool completely. Slice and enjoy the delicious and healthy cake.

Instructions
  1. Sieve and mix all the dry ingredients, that is, wholewheat flour, barley flour, cocoa powder, baking powder, baking soda and salt. Sieve it multiple times to make the cake light and less dense.
  2. Whisk together eggs, powdered jaggery, vanilla essence, and oil.
  3. Add dry ingredients and milk alternately in the wet mixture and beat well. For each beat, start and end by adding dry ingredients.
  4. Preheat the oven to 180 degree centigrade.
  5. Grease a cake tin and pour the batter.
  6. Slightly dust the cashew nuts in little flour (Take 2-3 tbsp of extra flour in a small bowl and coat the nuts with the flour).
  7. Arrange these nuts on top of the batter carefully.
  8. Bake for 35-40 minutes, until a toothpick inserted comes out clean.
  9. Allow the cake to cool completely.
  10. Delicious and healthy cake is ready..!!
