Double chocolate quinoa cupcakes are super easy to prepare. They are healthy with the addition of the superfood, quinoa. Quinoa is high in fiber content and high quality protein. And it also loaded with potassium and iron. So this makes quinoa truly nutritious.
This is my first time using this super healthy grain. I was so excited to be a part of the BellyNirvana campaign organised by Plattershare, in association with Place of Origin. The theme of the campaign was to prepare healthy snacks using the healthy ingredients delivered by Place of Origin. As part of this campaign, I received Organic Farmers Co. Quinoa flakes and Natirel Raw banana flour. I baked these double chocolate quinoa cupcakes and baked quinoa patties using the Quinoa flakes. My family loved them. I also baked raw banana flour churros using the raw banana flour. I will post the recipe for the raw banana flour churros soon.
A little more about these healthy baked chocolaty goodies.. These double chocolate quinoa cupcakes are super healthy and delicious. They are soft, light and airy. You may have them totally guilt free as they are nutritious. So these fluffy cupcakes are made with Organic Farmers Co. Quinoa flakes, oats and a bit of wholewheat flour. I used cane sugar for sweetener, making it a healthier snack. Chocolate appears in double role as cocoa powder and dark chocolate chunks. You may use chocolate chips instead of chopped chocolate. The black raisins used, give these cupcakes a bite in between. They are rich in antioxidants too.
I am totally happy with the quality of the products that I received from Place of Origin. The quinoa flakes and the raw banana flour were of superior grade. The packaging too was very neat and clean with resealable zippers.
Now let us see how to bake these double chocolate quinoa cupcakes. First take the quinoa flakes and oats in a grinder and grind to a fine powder. Next, in a bowl, mix together all the dry ingredients, that is, the ground quinoa oats mix, wholewheat flour, baking powder, baking soda, salt and cocoa powder. Mix well. Then in another bowl, beat eggs until light and creamy. Add in the cane sugar to this and beat again. Next add the vanilla essence and oil and mix well.
Now slowly add the dry ingredients in to the wet mixture in parts, adding little milk in between. Meanwhile preheat the oven to 180 degree centigrade. Coat the black raisins with little wholewheat flour to avoid them sinking in the batter. Then add the black raisins and chocolate chunks into the batter and give a slight mix.
Now grease the cupcake moulds or line them with cupcake liners. Scoop in 2-3 spoon fulls of the batter into the moulds (fill them only little less than 3/4). Bake the cupcakes for 20 minutes, until a toothpick inserted comes out clean. Allow to cool. Enjoy the chocolaty bites!!
