Dahi Bhalla is one of my favorites. Dahi bhalla is similar to dahi vadas, as popularly known in South India. I fell in love with this dish when my Aunt prepared it once and packed some to take home. Since then I have planned to make it some day, but the day never arrived. So when I received the freshly ground Medu vada batter from F2F, i thought of using half of the batter for making dahi bhallas.
I was really happy with the outcome, and feel satisfied to have made some delicious dahi bhallas. And if you have ready made batter like this, the job is half done. From the texture of the batter itself, I made out that the vadas are going to be soft and fluffy. I felt it was perfectly fermented with the right proportion of urad dal and water. While frying, the vadas puffed up and became fluffy. Just after frying they had a crispy crust. But then as the recipe for dahi bhallas requires the vadas to be soaked in lukewarm water, after soaking they turned soft and spongy.
And then I soaked the vadas in creamy and spiced curd. The cold curd makes it soothing and refreshing. While serving, serve green mint chutney and sweet tamarind chutney on top. And finally sprinkle some chopped coriander leaves, red chili powder and chaat masala. Luscious and melt in the mouth dahi bhallas are ready in no time.

And for medu vadas, you just have to chop some onions and green chilies. And then mix it with the batter along with salt, curry leaves, grated ginger, black pepper balls etc. That’s it. And then fry them in hot oil. And there you have a plate of hot, crispy and tasty medu vadas!! So easy, isn’t it?
