How about some cold prawn salad? Salads are always so refreshing. But may sound boring to a few.  So how to go about it?? Yes… make it interesting by adding some interesting elements. A special salad once in a while is perfectly alright 🙂

So here I have made a simple yet very delicious prawn salad. It is best when served cold. The process is not very complicated, but you have to get the individual ingredients prepared and ready. And then mix them all together, give a light seasoning and chill. There you go! A bowl full of lovely bites. (And yes, the french fries on the side are home-made too 🙂 )

I have added in cooked prawns, pasta, cucumber, and sauteed mushrooms and used mayonnaise as the dressing. Garlic, tomatoes and blanched broccoli florets are also thrown in. As pasta is added, you may even serve it as a main dish by adjusting the proportions. A little salt, dried oregano, red chili flakes and dried rosemary enhances the flavors of this cold salad.

Do try this interesting prawn salad as soon as you have most of the ingredients. You may add or avoid few of the things as per your choice and availability. Lettuce leaves, cooked potatoes, red beans etc are some things that could be added on top of what is mentioned in the recipe below.

Instructions
  1. Clean and wash the prawns. Remove the nerve from the back of each prawn while cleaning.
  2. Marinate the cleaned prawns with turmeric powder, red chili powder and salt.
  3. Let it rest for about an hour.
  4. Then boil about 1 and 1/2 cups of water and add the marinated prawns and cook them for 15-20 minutes.
  5. Once done, remove from flame and allow to cool completely.
  6. Next wash and clean the mushrooms and slice them.
  7. Heat oil in a pan.
  8. Add the sliced garlic and saute for a minute.
  9. Then add the sliced mushrooms and saute for 4-5 minutes, until they turn light brown.
  10. Once done, remove from flame and allow to cool completely.
  11. Next blanch the broccoli florets in water with little salt.
  12. Allow to cool completely.
  13. Now in a big bowl, take the prawns, garlic and mushrooms, broccoli, cooked pasta, cucumber, and tomatoes.
  14. Add in the mayonnaise and mix well.
  15. Add salt if required.
  16. Add in the dried rosemary, oregano and chili flakes. Mix well.
  17. Delicious salad is ready.
