Now, you might be wondering, without sugar, butter and all purpose flour, then what else is left to make these brownies delicious.. Well, these brownies are enriched with the goodness of dark chocolate and really yummy fresh orange juice. The tie of Chocolate and orange is something that I tried recently and it is definitely a super hit. And a blend of healthier flours like wholewheat flour, jowar flour (or sorghum flour) and ragi flour (or finger millet flour) are included to make these chocolate orange brownies truly nutritious. Powdered organic jaggery is used as the sweetener and sunflower oil replaces the butter.

The wonderful orange tint and flavor is given not only by the fresh orange juice, but a secret ingredient (no more a secret now) – carrots. I would say that the brownies have actually two different textures. The chocolate layer is more cakey with more of flour mixture and all the rest of the ingredients. Whereas the ‘orange’ layer is more fudgy and creamy. The carrot puree gives it a softer texture. And with every bite of these brownies, you get to taste the rich chocolate cakey brownie part, interleaved with the comparatively colder, creamy orange flavored carrot layer. It is an unusual combination, but a must try. It is really delicious.

Let’s see the baking process of these Chocolate Orange Brownies!

Boil the carrots until cooked perfectly. Drain excess water and allow to cool completely. Then grind it to make a smooth puree. Sieve the wholewheat flour, jowar flour, baking powder and salt together 3-4 times. (Do not add ragi flour now). Keep it aside. Melt the bitter chocolate chunks with 1/4 cup sunflower oil in microwave. You may use double boiling method also. Once done, keep it aside to cool down completely.

Now beat the eggs in a bowl. To this, add vanilla essence, the remaining 1/4 cup sunflower oil and powdered jaggery and beat again until well combined. Now divide this egg mixture into two. To one half add the melted chocolate mix and combine. To this add the ragi flour also and mix well. Then add in half of the flour mixture sieved earlier. Add 2-3 tbsp of water if the batter is too thick.

Next, to the second half of the egg mixture, add the orange juice, orange zest and pureed carrots. Mix well until combined. Next add the second half of the flour mixture too and mix well. Now prepare the baking dish with oil and parchment paper. Preheat the oven to 170 degree centigrade. Pour the chocolate batter into the baking dish. Then pour the orange mix to the dish. With a toothpick, create swirl patterns. Next add the chocolate chips and chocolate shavings on the top. Bake for 25-30 minutes, or until a toothpick inserted comes out clean. Allow to cool completely, slice and enjoy the delicious and healthy chocolate orange brownie bites.
