Chicken Cutlets – Learn how to make flavorful Chicken Cutlets

Chicken cutlets or kebabs are my all time favorite. Whether to eat, or to prepare, they are one of the most loved choice. Crispy on the outside, these cutlets have a juicy and luscious filling. Grab one, and make your tea time chit chats more interesting!! Scrumptious and spicy kebabs to make your tea time warmer and more flavorful. Whenever I have guests planned to visit, I make them beforehand and freeze. Yes, chicken cutlets could be prepared and kept frozen for up to a week. You just have to take them out 1-2 hours before frying.

It is really very easy to make this savory snack. You just have to plan it in stages, and get the ingredients ready. Like, first boil the potatoes, then cook the chicken, next saute and make the filling, and finally the actual making of the cutlets or kebabs. And of course, the final frying!! Once you have the potatoes and chicken cooked, the job is half done. Then making the stuffing is easy and would not take much time. First you have to saute onions, ginger garlic paste and green chilies in oil. Then add the spices. Followed by the cooked chicken and potatoes. Then add more flavorings, and you are done!

Once the filling has cooled down a bit, you can start preparing the kebabs. Then roll them into beaten egg and bread crumbs. Now, these prepared cutlets are ready to be frozen, if you do not want to fry immediately. In fact, they could be even refrigerated (without freezing) for up to a day.  MAke sure you keep them at room temperature at least 1 hour before frying.

I usually use bread crumbs for coating. It gives the fried cutlets a nice and crispy outside. I remember, long back, my Mother used to use powdered rusk for coating. She used to buy rusk and then powder them at home. Then powdered rusk became available in the market. And now we all have changed to using bread crumbs. And they are equally good.

Instructions
  1. Cook the cleaned chicken pieces with little water, salt and pepper powder, as per your taste, in water.
  2. In the meanwhile, wash the potatoes and pressure cook them with little salt. I usually cook for 10-15 minutes. Once the pressure releases on its own, peel the skin off and keep them aside.
  3. Once chicken is cooked, shred them to smaller pieces and keep it aside.
  4. Now heat oil in a pan.
  5. Add the chopped onions and saute until they turn soft and light pink.
  6. Next add the ginger garlic paste and green chilies.
  7. Saute until the raw smell goes off.
  8. Simmer the flame and to this add turmeric powder and salt and mix well.
  9. Next add in the shredded chicken pieces and saute for a minute.
  10. Add in the mashed potatoes too and mix.
  11. Then add the red chili powder, pepper powder and garam masala powder and mix well.
  12. Check salt levels and add more if required.
  13. Add the chopped coriander leaves and mix.
  14. Cook covered for 2 minutes.
  15. Switch the flame off.
  16. Once this mixture cools down, we can start moulding it into shapes for frying.
  17. Before that, keep an egg beaten in a flat bowl, and take the bread crumbs in a plate.
  18. Now take small balls from the potato chicken mix and flatten it between your palms, to make small discs. Or you may make any shape like oval or heart.
  19. Heat oil in a kadai.
  20. Carefully place the prepared kebabs in the hot oil.
  21. Fry until golden brown by flipping the sides in between.
  22. Once done, place them on a paper towel to remove excess oil, if any.
  23. Serve hot with tomato sauce or ketchup.
