  1. Wash and clean the baby potatoes thoroughly. We are going to prepare this dish with the potato skin on, to make them crispy. So wash properly and remove any dark spots.
  2. Pressure cook the potatoes with little salt for 5 minutes (till they are almost cooked).
  3. Once cooked, drain the water and slightly flatten the potatoes using a flat plate or saucer. Do not apply too much pressure, else they will crumble and break down.
  4. Then heat oil in a pan.
  5. Place the flattened potatoes carefully into the pan.
  6. Flip sides and allow to fry for about 15 minutes.
  7. Once the potatoes turn nice golden brown and have crispy crusts, switch the flame off. And collect them in a bowl.
  8. In another bowl, mix together the fresh cream and mayonnaise.

  10. Add the prepared dressing and honey to the fried potatoes and let it coat the potatoes well.
  11. Serve hot with the chopped onions, spring onions and red chili powder sprinkled on top.
