How to make Cajun Spiced Potatoes at home easily – with step-by-step illustration:

If you have been to Barbeque Nation, I’m sure you would have fallen in love with this scrumptious dish named Cajun spiced potatoes. This dish holds an equal place among other grilled meat and seafood. And my husband loves it even more. This is not an everyday dish as it is prepared in quite a different way using a special spice mix, called the Cajun spice.

Cook the baby potatoes until almost done, and then shallow fry them until the crust turns crispy. Then coat them with a rich and flavorful spice mix and mayonnaise, cream and honey dressing. I referred to Neha’s Cajun spice mix at WhiskAffair, which seemed to be pretty close to what I believe is the original taste. But then gave it my own twist of taste.. 🙂 It turned out to be super yum, and hubby too was pleased.

First, wash and clean the potatoes thoroughly, as we are not going to peel the skin. This dish is prepared with the skin, which gives it a nice crispy crust. And as believed, most of the vegetables and fruits have much of the nutrients just under the skin. So you cook the potatoes up to 90%. I used pressure cooker to do this and cooked for 5 minutes. Once you cook the potatoes, slightly press them to flatten. I used a small saucer to flatten them. Please don’t press too hard, or it may crumble and fall apart. Then shallow fry these flattened potatoes in oil. Let it fry nicely until the outer crust becomes nice golden brown.

This dish is served best when it is still hot. So make sure that you do not fry them until, say, 20-25 minutes before serving. Mixing would hardly take 5 minutes. Once you have the fried potatoes, it is super simple. In a bowl, mix together the mayonnaise and cream. You may use any plain mayonnaise. Then add in about 1 tbsp of the Cajun spice mix .Mix well. Add the potatoes. Then drizzle little honey over it and give a mix. Make sure you do not break the potatoes into smaller bits. Once the fried potatoes are well coated with the dressing and the spice mix, you are ready to go! You have a plate of utterly delicious Barbecue Nation style Cajun spiced potatoes. So yummmm..!! Instructions
  1. Wash and clean the baby potatoes thoroughly. We are going to prepare this dish with the potato skin on, to make them crispy. So wash properly and remove any dark spots.
  2. Pressure cook the potatoes with little salt for 5 minutes (till they are almost cooked).
  3. Once cooked, drain the water and slightly flatten the potatoes using a flat plate or saucer. Do not apply too much pressure, else they will crumble and break down.
  4. Then heat oil in a pan.
  5. Place the flattened potatoes carefully into the pan.
  6. Flip sides and allow to fry for about 15 minutes.
  7. Once the potatoes turn nice golden brown and have crispy crusts, switch the flame off. And collect them in a bowl.
  8. In another bowl, mix together the fresh cream and mayonnaise.

  10. Add the prepared dressing and honey to the fried potatoes and let it coat the potatoes well.
  11. Serve hot with the chopped onions, spring onions and red chili powder sprinkled on top.
