Brinjal Fry

One of the most delicious recipes using brinjals is here!! Whenever I think brinjal, I think brinjal fry. It is totally tasty that no one could say no to it. If you have kids at home that turn faces on seeing this nutritious vegetable, or you yourself ain’t a big fan of brinjal, then this dish is for you. Try this out once, and you’ll start liking it.

 

You may adjust the spice levels. But what I feel is that, the more spicy it is , the tastier it will be. Cut thin brinjal slices to get crispier fries. You can marinate and keep this for 4-5 hours, but fry them only just before serving. Serve them hot and fresh.

Instructions
  1. Wash and clean the brinjals and slice them with the skin on.
  2. Make a mixture of red chilli powder, turmeric powder, corriander powder, crushed fennel, garam masala powder, salt, and ginger garlic paste.
  3. Sprinkle some water to make a smooth paste.
  4. Add in the sliced brinjal to the marinade.
  5. Marinate and let it rest for atleast an hour.
  6. Heat oil in a pan and fry the marinated brinjal slices.
  7. Flip to fry both sides.
  8. Remove them from oil and serve hot.
