Banoffee Pie (or Banoffi Pie) is an incredible dessert that originated in the UK. The term Banoffee is termed from Bananas and Toffee (Dulce de leche). Interesting, right? And believe me, the amalgam of bananas and Dulce de leche is a match made in heaven. So this dessert is essentially a layered sweet consisting of sliced bananas, toffee and cream. And these layers are assembled on a pie crust, or more often on a biscuit crumb plus melted butter base.

So when you take a bite of this melt in the mouth dessert, you get a burst of flavors. And this amazing pie has a lot of lovely textures too. The buttery and crumbly crust is just so inviting. The biscuit crumbs bound together by rich butter would leave you salivating and tempt you for another bite. This base layer is followed by a layer of rich and creamy toffee. Dulce de leche is that one component that makes any dessert quite interesting and enticing. It is rich, creamy and squidgy in texture. Just spread out a whole generous layer of toffee on the biscuit butter base. You may either make your own Dulce de leche from scratch, or turn a tin of condensed milk easily to a can of awesomely delicious toffee.

On top of this toffee layer, carefully place slices of ripe and sweet bananas. Fresh fruit always takes any sweet a notch above. And bananas go perfectly well with all of the other ingredients of this beautiful pie. Top these fresh bananas with whipped cream, and your dessert is almost done.

Whipped cream is so light and fluffy. It just melts in the mouth. You may repeat the layers again starting from the toffee bedding, banana layer and then the whipped cream. Finally top the dessert with chocolate curls, dry fruits like walnuts, chocolate sauce or berries. You may also sprinkle some good quality cocoa powder or coffee powder. It just tastes amazing. Keep to chill for some time and there you go! A classic dessert in minutes. So each layer of this pudding has a unique flavor and texture that together make this dessert unique and hence loved by all.

Instructions
  1. First prepare the Dulce de leche. For this pressure cook the unopened tin of condensed milk with enough water for one whistle. Then simmer and cook for another 20-25 minutes.
  2. Allow the pressure to release by itself.
  3. Take the tin out and allow it to cool completely.
  4. Meanwhile get the other ingredients prepared.
  5. Place the digestive biscuits in a zip lock bag (or any plastic cover).

  6. And then crush them with a rolling pin, until they form small crumbs.

  7. Next transfer them to a bowl.

  8. Add the softened butter and using clean fingers crumble and mix them, until they resemble wet sand.

  9. Now transfer this mixture to a spring foam cheesecake tin. I did not have cheesecake tin, and hence lined a cake tin with aluminium foil, so that it would be easier to lift it up afterwards.

  10. Press gently to even out the base layer of biscuit and butter.

  11. Press the sides too.

  12. Now refrigerate this base for at least half an hour or freeze for 20 minutes.
  13. Meanwhile, whip the whipping cream in a bowl. Prepare as per the directions given in the packet. I have used whipping cream powder and hence had to mix cold milk before whipping. (Make sure to freeze the bowl and the blades of the whisk for at least 20 minutes before you begin to whip).
  14. Once the toffee cools down to room temperate, open the can.
  15. Keep rest of the ingredients ready.
  16. Now take the biscuit and butter base of the pie from the refrigerator.
  17. Then spread out a whole generous layer of toffee on the biscuit butter base.

  18. Then place the sliced bananas on top of the toffee layer.

  19. Next transfer the prepared whipping cream on top of the sliced bananas.
  20. Finally top the cream layer with chocolate curls. You may also use dry fruits like walnuts, chocolate sauce or berries. You may also sprinkle some good quality cocoa powder or coffee powder.

  21. Drizzle some toffee too.

  22. Allow to chill for 20-30 minutes, and your dessert is ready.
