Baked Tomato Chicken – A grill recipe

Baked tomato chicken is a quick and easy recipe that needs no stirring, sauting or grinding.. Cool …right? On any lazy day if you feel a bit too tired to cook something, then this grilled dish could be your savior. Yes, it is very easy and delicious too.

Chicken in tomato pulp or tomato bed, spiced up with some Italian seasoning is an awesome combo. I did not add any water for cooking. Only a spoon of oil is used for greasing the dish. The juices that ooze out from tomatoes, onion and chicken is all that is required for the cooking. So the flavors are all locked in itself.

First prepare a bedding of tomatoes, onion and garlic. Spice it up with some salt, pepper, oregano, and rosemary. Then the chicken pieces coated with a light spice mix is placed on tomato bedding and grilled for about 40 minutes, flipping sides once in between.

So this recipe needs no sauting of onions till golden brown, no frying of spices till the oil appears on top, or no grinding of masalas. You just have to mix all the ingredients and assemble the dish for grilling. As easy as that. Once in between you have to turn the chicken sides. Because you don’t want burnt meat. And that is it. The dish is done. You could devour it happily with some fresh croutons or even fried rice. We had both together with our baked tomato chicken. It tasted really yummm and rich. A feel of being to Italy!! 🙂

Instructions
  1. Marinate the chicken pieces with salt, pepper and ginger garlic paste. Let it rest for at least half an hour.
  2. In the meanwhile, prepare the tomato bedding.
  3. For this, in a bowl, mix together the diced tomatoes, onion and garlic.
  4. To this, add salt, pepper, chili flakes, oregano, dried rosemary, and corriander leaves.
  5. Mix well.
  6. Now grease a baking dish with olive oil. Use a dish that is grill-safe. I have used a ceramic dish without any silver/golden lining.
  7. Transfer the tomato mixture to the baking dish.
  8. Spread it throughout the base of the dish evenly.
  9. Now place the marinated chicken pieces on top of the tomato bedding, securing them in small shallow wells.
  10. Grill the dish for 20 minutes.
  11. Then turn the chicken pieces and grill for another 20 minutes, until chicken is cooked perfectly.
  12. Serve hot with crispy croutons or rice.
